he's okay now. my main concern is that he takes his bandaid off... it's gotta stay on for 5 days. Not easy with a 3 year old...

pie recipe

NOTE: I have not tried either of these recipes, but I got them out of a magazine I subscribe to, which consistently has good recipes. I plan on trying this one out and bringing it to my small group in 2 weeks.

Pear-Cranberry-Vanilla Pie

To ensure that this pie is filled to the brim with pears and cranberries, be sure to use a 9 1/2 inch deep dish pie plate.

Makes 12 servings; total time: 2 hrs + cooling

1 recipe Flaky Pie dough (recipe at bottom)
2/3 cup sugar
3 Tbsp ground instant (Minute) tapioca
1/4 tsp ground nutmeg
1 vanilla bean
2 1/2 lb bartlet or anjou pears, peeled, cored and sliced into wedges
2 cups fresh or frozen cranberries
1/3 cup pear juice or nectar
2 tbsp unsalted butter, cold, cubed
1 tbsp whole milk
1 tbsp coarse sugar

Preheat oven to 375; line a baking sheet with foil
Prepare pie dough according to recipe and rolling directions (again, below). Refrigerate dough while preparing fruit for filling
Stir sugar, tapioca and nutmeg together in a large bowl. Split vanilla bean down the center, peel skin back, and scrape out seeds with the tip of a paring knife. Stir seeds into the dry ingredients until incorporated. Toss dry ingredients with pears, cranberries, and juice until fruit is well coated. Transfer filling into pie shell. Dot the top of the pie with butter cubes; return to refrigerator while preparing the lattice top.
Top pie with lattice strips. Transfer to baking sheet. Brush lattice with mnilk, sprinkle coarse sugar on top, and bake for 50 minutes. if edges of crust are golden, cover with a pie shield, and return to oven until filling is bubbly and pears are fork tender, 20 minutes more. Remove pie from oven; cool on a rack for at least 2 hours before serving.

Flaky Pie Dough
Makes 2 single 9 inch crusts or 1 deep dish double crust. Total time: 15 minutes + chilling
3 cups all purpose flour
1/4 cup sugar
1/2 tsp table salt
1 1/2 sticks unsalted butter, cold, cubed
1/2 cup shortening, cold, cubed
3/4 - 1 cup ice water
1 tsp distilled white vinegar

Stir flour, sugar, and salt together in a large bowl. Using a pastry blender, cut in the butter and shortening until it's the size of peas.
Combine water and vinegar, then add to flour-butter mixture, stirring with a fork until dough holds together. form into a ball, divide in half, flatten each half into a disk, and wrap in plastic.
Chill for at least 1 hour before rolling.
To roll, place on a lightly floured surface and roll into a 14 inch circle. Transfer dough to the pie plate, pressing into bottom of plate with your thumb. Trimn edges to 1/2 - 1 inch overhang.
