Need help with recipes and snacks.(diabetic)

Do you guys know of any snacks to eat that are healthy and diabetes friendly? Or any recipes? I'm trying to do this cheap as possible! We have been TTC for over 4 years now and just started Provera(8/29/13) and will start Clomid. The endocrinologist recommended losing weight so I'm really putting an effort in now. I've been working out regularly for a month but I suck at eating healthy. Any help would be greatly appreciated!
Me: 22 Hubby: 26
Diagnosis: PCOS - irregular cycles - no ovulation
Clomid Cycle 1: Ovulated - BFN
Clomid Cycle 2: Ovulated - BFN
Cycle 3: Started AF without meds and hoping to ovulate without meds!

I love kale chips, and they are asy to make. Apples and natural peanut butter (no sugar added). Salads are good as a snack, just be careful with the dressings, but they can be filling and you can eat a HUGE plate and the calorie count be super low, and it is very easy on the glucose meter. (I check mine everytime i eat)
