Here is a great recipe I've been tweaking for a while now... It cooks for 4 but would be very easy to cut down.

4 pieces of boneless, skinless chicken breast
1 good sized green pepper, chopped
seasoned salt, garlic pepper (or your own preference)
few tbsp oil... I used vegetable, you could use EVOO
about a cup of tortilla chips
shredded cheese

Drizzle oil in pan and lightly coat both sides of chicken with oil. Add chopped green peppers and spices. Cover with lid. Cook on medium heat until cooked through and lightly browned on both sides.

In a small casserole dish, lightly spray with non-stick cooking spray and crunch tortilla chips on bottom of dish. Add a small layer of cheese, then top with chicken and the green peppers. Add a little more cheese, your preference. Place in oven for a few minutes to melt it together and soften chips.

This is very, very good. I don't know how to figure out points or anything... but it tastes great and if you eat it with a salad or plain baked potato, I would say good to go!
