Thanks for the recipe Laura - It was delicious! I used english spinach as well since I already had some in the fridge.

Breaded Chicken Fetticuini Alfredo
1 Pound Noodles Fetticuini or Penna Rigato
Add some Salt or Sea Salt to the noodles and 1T olive oil to water too and boil untill done.

Sauce
5 Tablespoons butter
2 pints heavy whipping cream
2 to 2 and 1/2 cups grated parmesan cheese
1/2 t garlic salt
2 small dashes black pepper if you like it


Turn your stove on medium heat

Melt the butter, when its completely done add the heavy whipping cream use a wire wisk and keep on wisking. Add the cheese while wisking. Wait for it to boil and thicken. untill you get the thickness you are wanting. more cheese always thickens it. After that add garlic salt and pepper.

then add the white meat breaded chicken patties. You can either cook them in the oven for 12 to 15 minutes (they are pre cooked) or microwave them. cut up 2 or 3 into nice small pieces. So Drain noodles add chicken and sauce. Topp with extra cheese and a dash of garlic salt for presentation. Enjoy!

The chicken burritos were AWESOME! I even added a small thing of Velveeta cheese to make them cheesy.

Salsa Soup

Crock Pot, 4 Ingredients

1 lb. mild sausage, sliced
1 qt. white navy beans, undrained
2 cups mild or medium salsa
4 c. fat-free chicken broth

1. Brown sausage in skillet and drain well
2. Combine all ingredients in a slow cooker
3. Cook on low 8-10 hours or high 4-6 hours.


My notes: If you have a Trader Joe's near you, here is exactly how I make it--Chicken Cilantro sausage *fully cooked, so you don't have to brown it!*; 2 cans Organic Pinto Beans, drained so we don't get gassy :wink: ; two small tubs of their fresh mild salsa; one box of the Organic Chicken Broth. Soooooo yummy!

BEEFY CROCKPOT CHILI

1 1/2 lbs. ground round
1 1/2 lbs. stew meat, cut into 1/2 inch cubes
3 teaspoons olive oil
1/2 cups all purpose flour
1 cup water
3 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon ground red pepper
1 heaping teaspoon garlic powder
1 heaping teaspoon onion powder
1/2 teaspoon cumin
1/4 cup chili powder
1/4 cup cocoa powder
12 ounces beer
5 cups water

Brown ground beef in large skillet over medium heat. Meanwhile, dredge bite size pieces of stew meat in 1/4 cup flour. With slotted spoon, transfer browned ground beef to 4 quart crockpot.

Over medium heat, sprinkle 1/4 cup flour into drippings, stirring well to prevent lumps. Cook for about 1 minute, then add 1 cup water and worcesterhire sauce. Stir constantly until thick.

Pour over beef in crockpot. Wipe skillet clean, heat olive oil in skillet over medium heat. Brown stew meat, transfer to crockpot.

Add all seasonings, mix well, pour beer and remaining 5 cups water into crockpot.

Mix, cover and cook on low for 8 - 10 hours, stirring occassionally.

Oh my gosh, this was SOOOO good!!! I didn't make 3 lbs of chicken, only 1.5 or so, and I didn't use that much cream cheese but DH and I loved it. I served it with egg noodles and broccoli, and even DS gobbled it up!

This one is popular in our house. We actually just made this last weekend.

EASY BEEF STROGANOFF
4 cans of cream of mushroom soup
1 envelope of dried onion soup mix
1 cup of sour cream
1 1/2 pounds of beef stew meat, cubed

Mix cream of mushroom soup, dried onion soup mix and sour cream in crockpot. Add beef andstir until well coated. Cover and cook on HIGH 4 to 6 hours or on LOW 8 to 10 hours.

I forgot to say that you can serve the BEEF STROGANOFF with egg noodles, rice or mashed potatoes. We usually use egg noodles.

I found this recipe a while ago - I'll be making it this weekend:

Crock Pot Lasagna


1 - 1 1/2 lbs. ground turkey (preferably ground breast)
1 lg. onion, chopped
1 - 2 T. minced garlic
1 lb. mozzarella cheese (or reduced-fat if you can find it)
12 oz. container fat-free cottage cheese
1 t. italian seasoning (or 1/2 t. each oregano and basil)
8 oz. whole wheat noodles, cooked al dente (or use plain no-cook lasagna noodles)
29 oz. can tomato sauce
6 oz. can tomato paste
grated parmesan cheese

Cook turkey, onion, and garlic over medium heat. Add spices and tomato sauce and paste (you may need to add a little water if it seems too thick). Mix the two cheeses together in a bowl. In the crockpot, put about 1/4 of the meat sauce, then a layer of noodles, then a layer of cheese. Repeat layering twice, then top off with remaining sauce. Sprinkle with parmesan and cook on low for 4 - 5 hours.

**ETA**
I made this last night, and just wanted to add a few notes. This was really good! It made a lot, and I froze the extra in single servings for DH to take for lunches. I used just under a pound of extra lean ground beef and I added veggies (chopped mushrooms, broccoli, and cauliflower) to the meat and tomato mixture. I used Emeril's Italian seasoning, and the taste was just a little strong for me, so next time I might just use 1/2 tsp - 3/4 tsp Italian seasoning. But if you really like basil, oregano, etc then use the full amount.
