Does anyone have any vegetarian crockpot recipes? I'm not a veggie, but I have this small, wimpy crockpot that only heats on very low heat, so I don't feel safe using it for meat stuff... but I'd love to try some crockpot recipes...

I've tried a couple of crock pot recipes in the last week - both were excellent so I thought I would share here.

First of all, let me say- the Crock Pot is my new best friend... and when my DH came home smelling dinner today, he said, "I'm starting to LOVE this crockpot"

I'm so excited about this thread! Keep posting ladies. I usually love cooking but lately don't have the energy to stand for long. I love to put meals in the crockpot when I get a chance so dinner is ready by the time hubby comes home.

Teriyaki Chicken or Beef

2-3 lbs of chicken or beef
1 cup of teriyaki sauce
1 20oz can of pineapple
a dash of ginger

Put the chicken or beef in crockpot. Pour the rest of the ingredients over top. Cook on low for 8-10 hours.

I've got this one in my crock pot in the fridge for tomorrow.

Chicken Taco Soup

3 Boneless Skinless Chicken Breasts
1 Can Pinto Beans
1 Can Chili Beans w/Sauce
1 Can Black Beans (rinsed)
1 Can Corn
1 Can Diced Tomatoes
1 Can Rotel
1 Pkg Ranch Dressing Mix
1 Pkg Taco Seasoning

Dump everything into crock pot and cook on low for 8 hours, or high for 4 hours. Remove chicken and shred, and add it back into soup. Serve with crushed tortilla chips, cheese, sour cream, green onions, whatever you want. Yum!

Easy Pork Loin

1 - 3lb Pork Loin
2 - Cups water *
2 - Chicken Bullion cubes *
3 - Cloves garlic (smashed)
Salt and pepper to taste

Dump everything in the crock pot and cook on low for 8 hours, high for 4.

Strain the broth and bring to a boil on the stove and add in some corn starch to make a quick gravy.


* You can use 2 cups of chicken broth instead of the water/bullion cubes.

Red Beans and Rice

1 pkg (16oz) Dry Red Beans (soaked in water overnight or boiled in 8C water for 10 minutes, then remove from heat, cover and let sit for 1 hour; drain)
1 lb ham, cut in 1" pcs.
3 Cloves Garlic, minced (or 1.5 tsp minced garlic)
5 Cups Water
4 Bullion Cubes (I use Chicken, but you can also use beef)
Cavenders seasoning, or your favorite seasoning mix to taste

3 Cups Minute Rice
3 Cups Chicken Stock

Place soaked beans, ham, garlic, water, bullion cubes, and Cavenders in a slow cooker. Cook on high for 5-6 hours. Smash some of the beans to thicken up the liquid. After beans are done, prepare Minute Rice using the chicken stock and a little Cavenders. Serve beans over rice with cornbread!

These recipes all sound so yummy!! I love crock pot cooking and will definetly be adding these to my menu!
